Grilled Romaine Salad (2 portions)

1 Heart Romaine

1 Tbs Crushed Garlic

1 tsp Extra Virgin Olive Oil

1/2 c Cherry Tomatoes, Halved

1/2 c  Yellow Peppers, Sliced     

1/4 c Carrots, Shredded

1 Chicken Breast, Grilled

1- Cut Romaine in half lengthwise.  Brush cut half with Oil and Garlic.   Grill on smoking grill, cut side down, just until lightly charred.  Chop 

2- Top Greens with Vegetables and Grilled Chicken


Dressing

1/4 c Balsamic Vinegar

1 Tbs Red Wine Vinegar

1 Tbs Mustard

1/4 c Safflower Oil

This tastey and sophisticated salad is only 259 calories!  A fantastic lunch alternative.

1- Whisk all the ingredients.  Season to taste
